There is not vanilla, but a huge variety of vanillas, and it is up to us, pastry chefs, to enhance it in our preparations, way of using, and food pairing. We should be able to train the people who enjoy our cake (friends, family, customers…) to taste the difference between the different types of vanilla that exist.”
