“Some pastry chefs see vanilla as the salt of the pastry by adding it everywhere regardless of the flavor profile or origins. I prefer to enhance it in the selection of preparations where it is added in order for the vanilla to become the star of the recipe and not a commodity ingredient. There is not vanilla, but a huge variety of vanillas, and it is up to us, pastry chefs, to enhance it in our preparations, way of using, and food pairing. We should be able to train the people who enjoy our cake (friends, family, customers…) to taste the difference between the different types of vanilla that exist.”
