Mochaccino Ganache

Servings: 1.5 cups


  • 190g Milk Chocolate, 40%
  • 10g PROVA Gourmet FUSION Coffee
  • 110g Heavy Cream
  • 20g Cocoa Powder
  • 10g Glucose Syrup


1. Melt the chocolate in the microwave, add the Fusion coffee and mix to combine.
2. In a small pot, bring heavy cream, cocoa powder, and glucose syrup to simmer. Turn off the heat as soon as it starts simmering.
3. Pour the hot mix over the milk chocolate and Fusion coffee in 3 parts. With the help of a rubber spatula keep mixing fast and pressing down as you add the liquids.
4. Once the mix is well incorporated, pour it into a deep container, and emulsify with a hand blender until smooth and silky.
