Coffee Pastry Cream

Ingredients:

  • 480ml Whole Milk
  • 60g Sugar
  • 30g Cornstarch
  • 5g PROVA Gourmet Pure Madagascar Bourbon Vanilla Flavor
  • 20g PROVA Gourmet Colombian Coffee Extract
  • 80g Egg Yolks
  • 50g Butter (unsalted)

Directions:

  • 1. In a small pot bring milk to a simmer.
  • 2. In a medium bowl, whisk together sugar, cornstarch, vanilla, and egg yolks until mixture is pale yellow and smooth.
  • 3. While whisking continuously, slowly pour hot milk into egg yolk mixture in a then stream, until all of it has been added.
  • 4. Return mixture to pot and cook over medium heat, whisking constantly until pastry cream begins to thicken, about 5 minutes. Add coffee extract and mix until combined.
  • 5. Remove from heat and finish by adding butter and mix until fully incorporated.
  • 6. Transfer to another container, cover with plastic wrap and cool completely.
  • 7. Use this pastry cream to fill choux, tarts, croissants, and more!
