Coffee Pastry Cream

Ingredients:
- 480ml Whole Milk
- 60g Sugar
- 30g Cornstarch
- 5g PROVA Gourmet Pure Madagascar Bourbon Vanilla Flavor
- 20g PROVA Gourmet Colombian Coffee Extract
- 80g Egg Yolks
- 50g Butter (unsalted)
Directions:
- 1. In a small pot bring milk to a simmer.
- 2. In a medium bowl, whisk together sugar, cornstarch, vanilla, and egg yolks until mixture is pale yellow and smooth.
- 3. While whisking continuously, slowly pour hot milk into egg yolk mixture in a then stream, until all of it has been added.
- 4. Return mixture to pot and cook over medium heat, whisking constantly until pastry cream begins to thicken, about 5 minutes. Add coffee extract and mix until combined.
- 5. Remove from heat and finish by adding butter and mix until fully incorporated.
- 6. Transfer to another container, cover with plastic wrap and cool completely.
- 7. Use this pastry cream to fill choux, tarts, croissants, and more!
