Coffee Chip Cookies

Ingredients:
COFFEE CHOCOLATE CHIPS
- 200g Dark Chocolate
- 2g FUSION Coffee
COFFEE COOKIE
- 227g Butter (softened)
- 400g Dark Brown Sugar
- 2ea Eggs
- 20g PROVA Gourmet Pure Madagascar Bourbon Vanilla Paste
- 40g PROVA Gourmet Colombian Coffee Extract
- 250g All Purpose Flour
- 57g Cocoa Powder
- 1 tsp Baking Soda
- 1 tsp Salt
Directions:
COFFEE CHOCOLATE CHIPS
- 1. Melt chocolate and Fusion Coffee to 45°C.
- 2. Temper infused chocolate and pipe into chocolate chips.
- 3. Let crystallize and set aside.
COFFEE COOKIE
- 1. In a stand mixer with paddle attachment, cream together softened butter and dark brown sugar.
- 2. Gradually add eggs, vanilla, and coffee extract.
- 3. Add dry ingredients and mix until combined. Fold in coffee chocolate chips.
- 4. Let dough rest before scooping into portions.
- 5. Scoop onto lined sheet tray and bake at 350°F for 15 minutes.
