Coffee Chip Cookies

Ingredients:

COFFEE CHOCOLATE CHIPS

  • 200g Dark Chocolate
  • 2g FUSION Coffee

COFFEE COOKIE

  • 227g Butter (softened)
  • 400g Dark Brown Sugar
  • 2ea Eggs
  • 20g PROVA Gourmet Pure Madagascar Bourbon Vanilla Paste
  • 40g PROVA Gourmet Colombian Coffee Extract
  • 250g All Purpose Flour
  • 57g Cocoa Powder
  • 1 tsp Baking Soda
  • 1 tsp Salt

Directions:

COFFEE CHOCOLATE CHIPS

  • 1. Melt chocolate and Fusion Coffee to 45°C.
  • 2. Temper infused chocolate and pipe into chocolate chips.
  • 3. Let crystallize and set aside.

COFFEE COOKIE

  • 1. In a stand mixer with paddle attachment, cream together softened butter and dark brown sugar.
  • 2. Gradually add eggs, vanilla, and coffee extract.
  • 3. Add dry ingredients and mix until combined. Fold in coffee chocolate chips.
  • 4. Let dough rest before scooping into portions.
  • 5. Scoop onto lined sheet tray and bake at 350°F for 15 minutes.
